The night before the scheduled 6am bottling run for the Viognier, we settled in for a delicious dinner with old friends in the wine industry. With good conversation, one bottle of wine quickly led to another. As many good stories go, we all got a bit carried away in the fun of it all. We'd intended to pop in, as usual, to watch the bottling, but it went ahead without us and the Viognier was bottled in slightly different bottle to the one we had originally selected. Ooh, tell me more about the wine...

Viognier - not a wine most people have tried. Complex, textural and delicious, it's the gift that keeps on giving. Sip it slow or enjoy with a spicy Asian dish, you won't be disappointed by trying something new!

GI (region where grapes sourced): Barossa Valley
Colour: Pale gold.
Aromas: Complex aromas of green nectarine, apricot and yellow stone fruit with nuances of roasted nuts and nougat.
Palate: Concentrated flavours of green and yellow stone fruits, orange blossom, with savoury notes of clove and hints of vanilla, all in perfect harmony and finishing with a long creamy, textured finish.

Variety: 100% Viognier
Harvest Date: 22nd February 2018
Maturation: 32% fermented and matured in a new French oak barrique for 7 months with the remaining portion fermented and matured in stainless steel

Harvest notes: Handpicked grapes were whole bunch pressed to a barrique with the remaining portion being pressed to stainless steel. The barrique was fermented naturally with indigenous yeast and matured on lees for a further 7 months. Regular lees stirring was employed to help build structure, generosity and a subtle creaminess in the wine. The stainless steel portion was fermented at cool temperatures to retain freshness. The wine was then matured on fermentation lees for 7 months with regular lees stirring before being blended and bottled.
